Welcome to Baking for my Bro! I have made these beautifully decorated vanilla cookies with lemon glaze. However this is not an ordinary cookie. I have decreased the amount of butter and sugar in the recipe to make healthy and yummy to eat.
TIPS:
Make sure you beat all your components together thoroughly otherwise you might have a unmixed batter or a dough that will be hard to need.
Make sure you make wide cookies so you can make as many different designs on them easily.
Don't put too much flour as you roll dough out because it can cause very stiff dough that will be very hard to roll and cut out.
I N G R E D I E N T S:
1 tablespoon butter
1/2 cup sugar
1 large egg
1 1/4 teaspoon vanilla powder extract
1/4 cup vanilla sweetened yogurt
1 3/4 cup buckwheat flour
1/2 cup grounded pumpkin seeds
1/2 teaspoon baking powder
1/2 xantham gum powder
1/4 teaspoon salt
G L A Z E:
1 cup of powdered sugar
1 tablespoon squeezed lemon juice( add more if still crumbly.)
D I R E C T I O N S:
1- First cream together the butter and sugar with a beater in a large bowl. Then, add the egg, vanilla extract, and vanilla sweetened yogurt. Beat all these together to make a wet mixture.
2- After that, add buckwheat flour, ground pumpkin seeds, baking powder, xantham gum, and salt. Once you have done that, beat all your ingredients together.
3- Take your dough and put it on your counter table with a little bit of flour on the bottom and top. Start to roll out your dough to 1 millimeter thick. Use any cookie cutter to make the cookies. After making your cookies, sprinkle some sugar on the top and put it in the oven at 350 degrees and bake for 8-12 minutes.
4- Take out when ready and cool for 15 minutes before applying glaze. While the cookies are cooling, put the glaze you made in a piping bag or plastic bag and pipe any design you like on your cookie.
