*Diwali Special* Gluten-free, Dairy-free and Nut-free Vanilla Saffron Cookies

Dad made dollar sign, my brother made 3-D peas-in-a-pod and mom tried to make a butterfly but it looked more like a lobster! (lol)


I made these delicious cookies after being inspired by Indian desserts that my grandma makes. Since my brother cannot eat nuts, I have used sunflower seeds and pumpkin seeds to not only make the cookies healthy but also to make them taste richer.





 

Diary free, Nut free, gluten free, and soy free.



Ingredients:

- 2 tablespoons of vegan butter

- 1/4 cup sugar

- 1/2 cup of vanilla sweetened yogurt

- 1 large egg

- 1 teaspoon of vanilla extract

- 1/4 teaspoon of saffron (add as much as needed)

- 1 3/4 cups of buckwheat flour

- 1/4 cup of sunflower seeds

-1/4 cup of pumpkin seeds

Optional: You can roast them.

- 1/2 teaspoon of baking powder

- 1/2 teaspoon of xantham gum

- 1/4 teaspoon of salt



Directions:



1) First take your butter, sugar, egg, yogurt, and vanilla extract. Beat them together thoroughly. Then add saffron. Look below for further instructions for how to add your saffron. Then mix well.


2) After you have made the wet mixture, put in your dry ingredients which contains buckwheat flour, baking soda, xantham gum, salt, pumpkin and sunflower seed mix: grinded.


3) Finally mix the ingredients till well combine.
