Apple Caramel Custard

Delicious apple dessert that will blow your mind. Dairy-free, Gluten-free, and Nut-free.




Today was a stressful day at school and I wanted to relax. I went to my kitchen and started to brainstorm a new dessert to make. Something easy and simple. I thought of making vanilla custard. My whole family loved it. However, I wanted to add some fruity taste too it, but not over doing it. I thought of using apples. since it has a soft holiday taste to it.


Inspiration:

I had gotten this recipe from a very popular website called Minimalist Baker. However, in this recipe I modified the amount of sugar and other ingredients to make it healthy and to make the quantity a little less. I also created an apple caramel to make it taste a little warm and add a little texture to it.



I N G R E D I E N T S


Vanilla Custard:

  • 1 can of full fat coconut milk or 1 1/2 cups of Oatley milk

  • 5 egg yolks

  • 2-3 Tbsps. of white or brown sugar

  • 2 1/2 Tbsps. of cornstarch

  • 1 Tbsp. of vanilla extract or a 1/4 tsp of vanilla bean seeds


Apple Caramel:

  • 1 apple(peeled and diced)

  • Pinch of ground cinnamon

  • 5 spoons of water

  • 2 spoons of brown sugar

  • 1 tsp of cornstarch


D I R E C T I O N S


1. Take a sauce pan and heat milk on medium heat.


2. In the meantime, take a bowl and add egg yolks, sugar, and cornstarch.


3. Whisk thoroughly.


4. After mixing, whisk in the hot milk in the egg mixture.


5. Then add the mixture back in the saucepan and cook on medium heat until the consistence is pudding like.


6. Take it off the stove once finished and start straining the mixture.


7. Add some of the vanilla extract or vanilla bean.


8. Put in the fridge.


9. Meantime, peel and dice an apple.


10. Mix apples in a sauce pan with sugar, cornstarch, a little water, and cinnamon.


11. Cook mixture till everything is mixed and is starting to bubble.


12. Once you can see it is thickened and is a little less runny than before, take it off the stove and cool it for about 10 minutes.


13. After is cooled, place the custard in little ramekins and drizzle some apple caramel on top. Enjoy!
