Delicious Orange Bundt Cake

A Tasty Bite of Cake that you will remember forever! Dairy-free, Gluten-free, and Nut-free.



Bunt Cake is a very yummy cake! It is in the shape of a bunt( which also comes in many different shapes and sizes) and is so much fun to make.



 

I N S P I R A T I O N:


I recently received a cooking book for my birthday! I have tried so many recipes in it and have experimented with them. It has vegan and glutenfree recipes, and the authors name is Sara McGlothlin. But one of them really stood out to me the most. Almond Bunt Cake!! Since my brother is allergic to almonds, I used sunflower and pumpkin seeds as a substitute. It complimented the taste of the orange and made the texture even better. I had so much fun making it and eating it as well :)

I N G R E D I E N T S:



DRY INGREDIENTS:


- 2 cups of brown rice flour

- 1/2 cup of grounded pumpkin seeds

- 1/2 cup of grounded sunflower seeds

- 3/4 cup of brown sugar

- 2 teaspoons of baking powder

- 1/2 teaspoon of baking soda

- 1/4 teaspoon of salt


WET INGREDIENTS:


- 3 flax eggs- 3 tablespoons of grounded flax seeds mixed with 6 tablespoons of water, set aside to stiffen

- 3/4 cups of full fat coconut milk

- 1 teaspoon of apple cider

- 2 eggs

- 2 tablespoons of maple syrup( add more if not sweet enough)

- 1 teaspoon of vanilla extract

- 1 tablespoon of coconut oil


FLAVORING:

- 1 teaspoon of orange extract

- 2 tablespoons of orange zest


GLAZE:

If you want to make your cake creamy and have a stronger taste of orange, you can mix orange juice and powdered sugar.


 

D I R E C T I O N S:


1- Preheat your oven to 350 degrees and prepare the pan by spreading olive oil on.


2- Mix together grounded flax seeds with water and stir. Then put aside.


3- Then, mix coconut milk and the vinegar together.


4- In a large bowl, mix together the brown rice flour, grounded pumpkin seeds, grounded sunflower seeds, brown sugar, baking soda, and salt. Set aside.


5- In another bowl stir the prepared coconut milk with the flaxseed eggs, vanilla extract, orange extract, orange zest, eggs, and maple syrup.


6- Pour the dry ingredients with the wet and then pour the melted coconut oil.


7- Mix properly.


8- Add batter to prepared pan and put in oven for 35 mins.


*If you want to make a different flavored bunt cake, add the flavoring in the wet mixture before adding it into the dry mixture. It will increase the taste of it :).*
