Lychee Upside Down Cake

Very very moist! Almost tasted like angel cake! Dairy-free, Gluten-free, and Nut-free.

Hello everyone! Today I made a new recipe: Lychee Upside Down cake! I wanted to make a brand-new dessert for Diwali, but wasn't sure of what to make. My mom brought some lychees, so I thought of using them. The last time I made any dessert with lychee was a cake, however that didn't go well. There wasn't enough lychee flavor in the cake so I thought of finding a new way of enhancing the lychee flavoring. The closest dessert I thought was a upside down cake. It not only gave a stronger lychee flavor but a great texture and fluffy cake. I really enjoyed my experience while making this cake and my whole family really enjoyed it! I hope you enjoy it as much as I did! :)


In order to make this cake, I used the pineapple upside down cake recipe from whatthefork.com.









 

I N G R E D I E N T S:

Preparing the pan:

  • 2 spoons melted butter (earth balance)

  • 2-3 tablespoons of sugar

  • Half cut lychees

Preparing the batter:

  • 1 1/2 or 1 3/4 of brown rice or gluten free all-purpose flour.

  • 1 tsp of xantham gum

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp fine sea salt

  • 1/4 cup of cold butter

  • 1/2 cup of white sugar

  • 1 egg

  • 1/4 sweetened vanilla yogurt (SOY)

  • 1/2 cup of full fat coconut milk

  • 1/2 cup of lychee juice

  • 1 Tbsp vanilla extract


D I R E C T I O N S:

1. First take a pie pan and coat it with butter. Then, sprinkle sugar around the edges. Take a can of lychees, strain out the juice (use for later). After that, add all the lychees on the pie pan after cutting each in half.


2. Set aside


3. In a large bowl, beat egg and sugar till it turns pale yellow. Then add butter, vanilla extract, and vanilla yogurt to the bowl. Beat everything together till it becomes smooth. Finally, add milk and lychee juice to your mixture and give another good mix.


4. Then, in a medium sized bowl, whisk flour, baking soda, baking powder, xantham gum, and salt.


5. Finally add all of the dry ingredients to the wet.


6. Mix all ingredients thoroughly.


7. Take the batter and pour on top of the lychee base of the pie pan. Make sure all edges are covered.


8. Bake at 350 for 40 mins.


9. Take out, flip over, and enjoy!
