Best Ever Gluten Free, Dairy Free Apple Pie

Hello everyone! Today I looked at a recipe from food network and changed the whole recipe to being gluten free! I used sprouted brown rice flour to make my apple pie gluten free. Some suggestions for flour and butter are, Pure Living sprouted brown rice flour and earth balance butter.


Thanksgiving was coming and I wanted to make something new. My dad loves eating apple pie but had to stop because it didn't suit him and he found out he was allergic to gluten. That's why I wanted to make apple pie, gluten free! Plus, apple pie is a really good thing to eat on thanksgiving. It was pretty hard at first when I started making the dough since the consistence was too rough. But was getting fun at the part when I caramelized the apples. It took three hours!!! But it was worth it. It had cooked in a hour.


 

T I P S:


  • Make sure that you have soft apples to cook with such as Red or Golden Delicious so that your apples cook faster and are more soft for your filling

  • Beating your dough after adding all your ingredients helps have a properly mixed dough to use.

  • Cut your apples after peeling in slightly thin slices so that it will cook easily. I once used big cut apples and the juices didn' t form into caramel properly for my filling.

 

Prep time: 3 hours Cook time: 50 minutes Equipment: 9 inch pie pan & large skillet


I N G R E D I E N T S:




D O U G H:


  • 2 cups of brown rice flour

  • 3 tablespoons of sugar

  • 1/4 tsp of salt

  • 7 tablespoons of cold butter

  • 1 egg, lighten beaten with 2 tablespoons of water

  • 3 tablespoons of flaxseed


F I L L I N G:


  • 6 apples(Golden Delicious or Mutus)

  • 1/2 tsp cinnamon

  • 2 tablespoons of lemon/lime

  • 2/3 cup of brown sugar

  • 2 tablespoons of butter




D I R E C T I O N S:


1- First prepare dough. Take flour, salt, and sugar and mix them together in a large bowl. Then add butter and mix until your batter looks like crumble. Then add the beaten egg with water into the mixture. Then add flaxseed to help bind the dough. Add any extra water if necessary.


2- Need dough until smooth. Wrap in cling wrap and keep in fridge for an hour and a half.


3- Next, prepare filling. Take 6 apples peeled and cored. Mix with lemon/lime juice. Then, coat the apples with sugar. In a large skillet, melt butter over medium high heat. Cook your apples until all the sugar dissolves. Cover the apples and reduce the heat to medium low. Cook until apples are soft and have released anymore juices for 7 minutes.


4- Strain the apples through a colander and take the juice strained back into the large skillet. Simmer over medium heat until thickened.


5- In a medium bowl, mix the prepared apples with the thickened juice and spices. Keep it to the side to completely cool.


6- Now, take your dough out of the fridge and split it in half. Take the first half and roll it between two pieces of parchment paper. Do the same for the other piece of dough. Cool them in the fridge for 10 minutes.


7- In the mean time, preheat the oven to 375°F.


8- Take your disc's out of the fridge. First layer one disc of dough on the bottom of the pie pan. Add your filling. After that, layer the next disc of dough on top. *Don' t worry if the top is a little crumbly, it is because we used gluten free flour*. Once done, bake for 50 minutes. The edges should turn to a golden brown color. Enjoy!
