I was interested by GlutenFreePalate.com chocolate cupcakes recipe. I changed the amount of sugar put in the cupcakes and used brown rice flour instead of gluten free Bobsmill gluten free flour meal. I love using the Pure Living sprouted brown rice flour in many of my recipes. I changed the type of milk called Elmhust Milked Oats. This milk made my cake nice and soft.
Why do I use sprouted brown rice flour?
Sprouting a natural process of germinating. It gives you high nutrients, vitamins and minerals, and much more. According to healthline.com, sprouting any beans, nuts, grains, and vegetables is very healthy for our body. It increases nutrients levels, protein, folate, magnesium, phosphorus, manganese and vitamins C and K than non-sprouted plants. Health.com
I N G R E D I E N T S:
3/4 cups of Sprouted Buckwheat flour
1/4 cup of Sugar
1/4 cup of vanilla unsweetened coconut yogurt
1 1/2 teaspoons of baking powder
1 1/2 teaspoons of baking soda
1 teaspoon salt
2 large eggs
1 cup of Dairy Free Milk
1/2 cup Avocado Oil
1 1/2 teaspoon of gluten free vanilla extract
3/4 cups of warm water.
Directions:
Preheat your oven at 350 degrees. Line your cupcake baking pan with cupcake liners, set aside.
First take your avocado oil, milk, eggs, and vanilla extract and beat together properly until well combined.
Then, sift your cocoa powder, flour, sugar, baking soda, baking powder, and salt into the same bowl.
After that, add your warm water and beat all the ingredients till mixed.
Pour your batter equally in your prepared cupcake pan from before.
Put in the oven.
Let it cool for 15-20 minutes
Frost your buttercream on your cupcakes.
B U T T E R C R E A M R E C I P E:
1/4 cup cold butter
1 cup of powdered sugar
1 1/2 teaspoons of vanilla extract
If want chocolate buttercream: add some cocoa powder.
Directions:
Take a bowl and put in butter and vanilla extract. Beat it with a beater until creamed. After that, add powdered sugar to the same mixture and beat the mix until well combined ( make sure you have a thick and creamy buttercream at the end). *If your buttercream is to thick, add a little bit more vanilla extract or a little bit of water.
